Feature Recipe - Dutch Boy Pancake
1/2 cup flour
2 Tbsp. butter or margarine
1/4 tsb. salt
1/2 cup milk
3 eggs
4 oz. (1/2 of 8-oz. pkg.) Cream Cheese, softened
1/2 cup Marshmallow Creme
1 cup sliced strawberries
2 medium peaches, peeled, sliced
1 cup blueberries
Preheat oven to 450°F. Add margarine or butter to 9-inch pie plate. Heat until margarine or butter is melted. Coat the bottom and sides evenly. Put flour, salt, milk and eggs into a bowl and whisk until all ingredients are blended together. Then pour the mix into pie plate. Place the pie plate on lowest oven rack. Bake for 18 minutes. Then reduce oven temperature to 350°F. Bake for an additional 10 minutes or until golden brown. While it is baking, beat the marshmallow cream and cream cheese with a mixer until they are well blended. Top the pancake with the cream cheese mix and fruit.
